TasteAtlas, an online experiential travel guide, dedicated to cataloging traditional food, local ingredients, and authentic restaurants, has honored Gyro with this title.
The name “gyro” literally means “turn” or “ring” in Greek, referencing the cooking method, where meat is stacked in a cone shape on a tall, vertical rotisserie spit.
As the spit rotates slowly in front of a heat source, the outer layer of meat is cooked and crisped, then sliced into thin, crispy, aromatic shavings.
The chef uses a long knife to slice the cooked meat.
